(Iemand ideeen?)
In 2003 we were in Australia and I bought some books. Cookbooks! How could it be otherwise. In the outback, I found great books: collected recipes from housewives in the outback, with so many sustainable ingredients, but very inventive and delicious. I think it's a very special little book.
In the "normal" bookstores I sniffed between cookbooks. I was very impressed by the Australian Women's Weekly. " From that book is this recipe: pistachio bread. It's actually a biscotti, but thinner. I love them, they are very aromatic. The cardamom gives a different taste with the orange.
I would like to try out this recipe as a base for other flavors. (Ideas anyone?)
Pistachio Bread
Adapted from The Woman's Weekly: 'Biscuits, Brownies & Biscotti'.
3 egg whites
1/3 cup (75 g)sugar
1/4 ts ground cardamom
1 ts finely grated orange rind
3/4 cup (110 g)plain flour
3/4 cup (110 g) shelled pistachios
Preheat oven tot 180 degrees.(350F)
Grease 8x26 cm bar cake pan: line base and sides with baking paper, extending paper
2cm above long sides of pan.
Beat egg whites in small bowl with electric mixer until soft peaks form. Gradually add sugar, beating until dissolved between additions. Fold in cardamom, rind, flour and nuts; spred mixture into prepared pan.
Bake in oven about 30 minutes or until browned lightly.
Preheat oven to 150 degrees. (300F)
Using a serrated or electric knife, cut bread into 3mm diagonal slices. Place slices on ungreased oven trays. Bake for 15 minutes (I baked for 18 minutes)or until dry ad crisp; turn onto wire racks to cool.
Makes 40.
